I don't know anything about phones or cryptography, so I'm genuinely clueless, but also genuinely interested.
No expert here either, my understanding is that cryptophones are actually devices. Where as Secure Star's Phonecrypt is a phone applications sort of like PGP is for e-mail and AIM. It runs on the phone like any other Windows Mobile application encrypting your conversation in virtually realtime with someone else who has the software also installed on their GSM phone.
Cryptophones free windows app only work analog modem to analog modem over POTS with both clients again running the software,
Apparently they also support a soft phone for laptops , and a pbx like gateway.
CDMA phones due to their use of Spread Spectrum Technology are much harder to hack. However there was a talk about just that at Shmoo so there are people laying the ground work for breaking CDMA as well.
