General networking courses cover networking including topologies, basic security, OSI layers and their usage, protocols, Network Operating Systems(unix, netware, M$), network hardware, etc...
Cisco would more than likely cover topologies, OSI model (focusing on layers 3, 2, and sometimes 1), cisco routers, cisco hardware, routed/routing protocols and cisco IOS commands, config, security, etc.....

Cisco Networking Academy: 4 simesters
1. OSI layer, What is a TLA (this is acually coverd!), sneaker net aka "how did networking come to be?", routed protocols, routing protocols, what are LAN, MAN, WAN.
2. Layer 1 stuff (gets into wiring, and running lines, grunt stuff). Industry standards, and complying with them, lot's of TLA's covered
3. What is CLI, basic's of a cisco router, static routes vs dynamic. This protocol vs EIGRP (cisco's own protocol), etc.
4. Working with MAN's and associated equipment. VLAN's, advanced networks (well for 3 router internal network before www). Access list and PIX firewalls.
This is how I remember it, might be off with the simesters. Took the courses in high school like 4 years ago. This gets you ready for CCNA, and I think it intro's now to CCNP stuff.
Hope this helps"Never Underestimate the Power of Stupid People in Large Groups"
