FHSS "hops" through 79 channels (78? Something around there.) in the same frequency area as 802.11b and g, using a set sequence for the hops.
Monitoring it is simple... As long as you have the hopping sequence for the station(s) that you wish to monitor. The obscurity of the hopping sequence is often touted being more secure than DSSS.

In addition to Proxim Harmony, BreezeNET/BreezeCOM (now Alvarion) was also a common brand.
