I think I may have mentioned it on the board before, but Mr. Lucky's at the Hard Rock Casino has great food. There is a special that isn't on the menu.

If you ask for the Steak and Shrimp special, they'll hook you up with a nice steak and shrimp dinner for only six bucks. Tell em' Grifter sent ya. :)

Shintaro in the Bellagio is what I would consider one of the finest restraunts in LV atm.
Not the cheapest, but certainly the best Japanese food there.

Dinner for 4 (more then we could eat) = $40 with tip

I love cocktail shrimp, at the end of fremont on the left (going from the strip) there is a ghetto place that sells cocktail shrimp for 50 cents or a buck.. i usually get around 10 of them... very refreshing.. :) Let me know if you find a good shrimp place :)
