  • Chicken Pot Pie

    Anyone got a good, easy recipe for chicken pot pie? I have a few already, but most are too time consuming. I am often too beat to cook much after work.

    Also, has anyone tried making it with a meat subsitute? I am a carnivore, but I live with a vegitarian.

      Haven't made a chicken pot pie in a long, and I'm not sure where my card is for it. If I find it the next day or two I'll post it.

      However here is a Veggie PP:

      2 tablespoons olive oil
      1 onion, chopped
      8 ounces mushrooms
      1 clove garlic, minced
      2 large carrots, diced
      2 potatoes, peeled and diced
      2 stalks celery, sliced 1/4 inch wide
      2 cups cauliflower florets
      1 cup fresh green beans, trimmed and snapped into 1/2 inch pieces
      3 cups vegetable broth
      1 teaspoon kosher salt
      1 teaspoon ground black pepper
      2 tablespoons cornstarch
      2 tablespoons soy sauce
      1 recipe pastry for double-crust pie

      Preheat oven to 425 degrees F (220 degrees C).
      Heat oil in a large skillet or saucepan. Cook onions, mushrooms, and garlic in oil for 3 to 5 minutes, stirring frequently. Stir in carrots, potatoes, and celery. Stir in cauliflower, green beans, and vegetable broth. Bring to a boil, then turn heat down to a simmer. Cook until vegetables are barely tender, about 5 minutes. Season with salt and pepper.
      In a small bowl, mix the cornstarch, soy sauce, and 1/4 cup water until cornstarch is completely dissolved. Stir into vegetables, and cook until sauce thickens, about 3 minutes.
      Roll out 1/2 of the dough to line an 11x7 inch baking dish. Pour the filling into the pastry lined dish. Roll out remaining dough, arrange over the filling, and seal and flute the edges.
      Bake in preheated oven for 30 minutes, or until the crust is brown.

      ***You can also add 1 package of firm tofu, drained and cubed***
      I myself do not like adding the tofu because it takes away some of the flavor

        I've had a lot of success adapting recipes from some of the big recipe sites.

        allrecipes dot com and recipes dot com are good

        Meanwhile, I'm just going to copy lil_freaks recipe to my collection <leech leech>

          Grandma Dank's Chicken Pot Pie

          Ingredients:
          1lb of diced chicken
          1 Entenmanns pie (any flavor)
          1 joint

          Preparation:
          1) Remove pie crust
          2) Place chicken into pie
          3) Replace pie crust
          4) Smoke joint until this mess is palatable.

          Serves 6.

              AST's pot pie special

              3 cans of mixed vegetables
              1 can cream of celery soup
              1 1/2 cups miso broth
              1 stick of margarine (melted)
              1 1/2 cups of Bisquick
              1 1/2 cups of milk

              With part of the melted butter, coat a 13"x19" casserole dish. Mix cream soup, miso broth and vegetables. Pour in casserole dish. Mix remailing melted margartine, bisquick and milk, pour over top of vegetable mixture. Bake at 350F for one hour.

              For a meat version, substitute chicken broth for the miso, subtract one cup vegetables, add 1 cup of dead animal of your choice.

                  I always found google's (dejanews) 10+ year archive of the moderated rec.food.recipes to be the most exhaustive source of recipes I've ever seen.

                  Google Groups: rec.food.recipes

                  Sometimes I just search by ingredients to see what others are making with them.

                    All good sources, but when in comes to recipes I find it best to get them from people I already know to have good taste in food., So asking is always good.

                      I cook food all the time, home made pot pie has never crossed my mind.. I just cook the ones in the little tin pans..

                        Chicken Pot Pie Recipe

                        2 Sara Lee Microwavable Chicken Pot Pies
                        1- 12 pack of Coor's Light

                        Place pot pies in microwave until it says "ding"
                        Drink the beer while waiting for pot pies to cool, this step makes them palatable.
                        If you use plastic dinnerware you don't even have to clean the kitchen when you're done.
                        I enjoy talking to myself...it's usually the only intelligent conversations I get to have.

                          Trust me, homemade always tastes so much better. Besides, the frozen ones tend to be full of sodium, sugar and fat.

                          I have to get my mom's recipe. It's a bit more work, but it's very tasty. She uses feta cheese in it.

                            I recently tried a home made carrot soup recipie that had feta cheese as an ingredient, and it was an excellent addition to the flavor-- but I am partial to greek salads anyway. :-)

                              Doesn't the cheese get all globby and nasty? IRC Feta doesn't melt that well.
