Yum, Guinness
Irish Guinness Cake
1/2 cup Butter
1 cup Brown sugar
3 Egg -- beaten
2 1/4 cups Flour -- self rising
1/2 teaspoon Apple pie spice
1 pinch Salt
2/3 cup Raisins -- soaked in Guinness
1/2 cup Candied peel -- soaked
1 1/3 cups Golden raisins -- soaked
1/4 cup Candied cherries
8 fluid ounces Guinness (May need more if you start to drink it before it goes into the cake)
Preheat oven to 350 degrees. Cream the butter and sugar until the sugar is dissolved; beat in the eggs. Add the flour, salt, apple pie spice and the soaked dried fruit. Mix in the Guinness, grease a deep 8 inch cake pan and pour
the mixture in. Bake for about 2 hours until firm in the center.
I'll post some more later."It is difficult not to wonder whether that combination of elements which produces a machine for labor does not create also a soul of sorts, a dull resentful metallic will, which can rebel at times". Pearl S. Buck

DANM lil'freak.. that sounds good.. I guess I forgot to post for myself heh
Siviak's Stroganoff
1 pound lean ground beef (as lean as you can get it)
1/2 small package of sausage
1 can cream of chicken soup
1 can cream of mushroom soup
1/2 can milk
1/2 can water
1 clove garlic (pressed or chushed)
1 package egg noodles
1 "dollop" sour cream
fresh ground pepper and other itilian seasoning to taste
brown the groud beef and the sausage together with garlic, pepper and seasoning. do not drain ALL the grease (thus the need for beef as lean as you can get it) the flavor will be worth it. Add soups, milk, and water until HOT (burn off alot of the liquid.. it should be thik). boil egg noodles, drain. add sour cream to soup mix. fold the egg noodles into the soup/beef/sausage mixture and enjoy.
I have been told that this is far from original.. but I have also been told that mine is some of the best... take it as you will... BTW feeds about 5+2 lunchesIf I had a nickle for every time someone offered me ten cents to keep my two cents to myself... I would be a rich man.

Simpler than I make it look
Fettucini Alfredo (this is delicious and fattening, so don't blame me if you like it)
1 pkg Fettucini Noodles (flat, not too wide)
1 large (fist sized or better) chunk of parmesian and/or romano cheese
1 pint of sour cream
nutmeg (pinch)
crushed garlic (1-2 Tblsp if you like it or use less if you don't)
2-3 tblsp olive oil
Prep ahead of time, it takes less than 15 minutes total:
* grate the parmesian/romano cheese until you have a large pile (it should be bigger than the sour cream container)
* make sure the garlic is crushed before you start the stove - if the garlic gets dark brown or burns, it's better to start over than use it
* cook your noodles until they're not hard anymore and let them drain (you should have to bite through them, not mushy etc. etc.) To keep noodles from sticking together toss them with some olive oil
* Save a handful of the cheese for garnish.
* when in doubt, use lower heat to slow things down
heat a large skillet to 7 on a scale of 10, add olive oil and let it warm up
add the crushed garlic stir around gently.
Add a pinch (1/4 teaspoon is more than a pinch) of nutmeg
as you begin to smell the garlic and nutmeg and it just about starts to turn brown add a couple spoonfuls of sour cream and get all the garlic and spice caught up in it.
Lower the heat to med-low
Continue to incorporate the sour cream until it's all in the pan and begins to bubble nicely.
Start to add the shredded cheese by sprinkling a handful at a time and folding it in (stir gently but thoroughly). Let it get back to bubbling then add more.
When all the grated cheese is incorporated and is bubbling along nicely, you can add the drained noodles back in and toss gently.
Serve immediately
As a side dish, this can feed 5-6 normal eaters. As a main course you can top with broiled, sliced chicken breast or sauteed mushrooms etc.
I have a couple more recipes I can add if the thread stays open :PThat's my story and I'm sticking to it.

Billy Hale's Forgettable Beer Chicken
Billy Hale is a professional musician that had a CW band, for a while, called the Forgettables. They had a great song called "I quit drinkin cuz one of you was bad enough" which probably never saw the charts.
One day when I was still in college we were all sitting around watching TV and trying to figure out what to do with the chicken we had, here's what Billy Hale came up with:
Billy Hale's Forgettable Beer Chicken
1 case of good beer (1 bottle per 8x10 baking pan - you drink the rest)**
1-2 cut up fryers (per baking pan)
1-2 medium yellow or sweet onions
3-4 pretty good sized potatoes (more if they'll fit)
salt and pepper, garlic powder to taste if you feel like it
Preheat the oven to 350
Open but do not drink 1 beer (let it sit for a few minutes)
Wash the chicken, yes I said *wash it*, think about where it's been since it died and how many times it may have hit the floor before it got in that package... Scrub off the potatos, peeling is optional. Peel the onion, scrubbing is optional.
Lay the chicken out in the pan with the skin side up.
cut the onions into fairly big chunks, but enough to distribute evenly around the chicken, do the same with the potatos. The pan should be pretty full at this point, so squish things down a bit to get the food evenly distributed.
Pour the beer, opened above over the contents of the pan. Add seasoning. Cover with aluminum foil, bake for 40 minutes then uncover and bake at 400 for 10-15 or until the chicken skin is brown and the chicken falls off the fork when poked.
This will serve 4-6 normal people and 3 of my friends
** special note on choosing beer, when I say "good beer" I don't mean budweiser. The type of beer you use depends on your tastes, whether you want sweet or savory. For sweet, perhaps an ale with sweet onions - for savory, you might try guiness or heavy microbrew. I used a Chimay Ale and it was pretty good, if I do say so myself. That's my story and I'm sticking to it.
